The NNSC is currently collaborating with one project that received funding from the FIRM awards and the Department of Agriculture and Food:
NutriMeat
NutriMeat is a collaborative project involving UCD School of Agriculture and Food Science, UCD School of Public Health, Physiotherapy and Sports Science, and University College Cork with the aim of developing healthier processed meat through product reformulations (i.e. salt and fat reduction, and the enrichment of healthy ingredients).
The part that the NNSC is involved in is an investigation into consumer perspectives on healthier processed meat. A focus-group based qualitative study and two online surveys with processed meat consumers were carried out to understand consumers’ opinions on different product reformulation strategies, and their acceptance of healthier processed meat products. Data collection has been completed, and data analysis is underway.
