The carbon footprint of the Irish diet
In a major report on the environmental impact of livestock farming, the UN Food and Agriculture Organisation has highlighted the need to seriously address the contribution of this sector of agriculture to the environmental challenges urgently facing the planet.
The carbon footprint of the human food chain goes far beyond farming to cover, transport and processing of primary produce, shipment of foods around the globe, the food service sector, the supermarket and the kitchen.
Researchers at the UCD Institute of Food and Health are involved in multi-disciplinary analysis of the carbon footprint of the Irish diet linking food science, agriculture, nutrition, environmental science and economics.
